SIAKAP MASAK TIGA RASA / BARRAMUNDI IN THREE FLAVOUR SAUCE









Barramundi in Three Flavour Sauce

Ingredients

1 barramundi
Turmeric powder
Salt
Corn flour
Cooking oil

Ingredients for sauce

3 tablespoons homemade chili paste
1 teaspoon plum sauce
1 teaspoon sweet sour sauce
1 teaspoon honey
1 tablespoon black pepper sauce

Garnishing Ingredients

3 inch cucumber – cut cubed
3 slices of pineapple cut cubed
1 onion cut cubed
1 tomato cut cubed
2 inch round cut carrots
Lettuce
Diced capsicum (red, green and yellow)
1 red chilli clipped
3 chillies clipped

Methods

1.    Fish cleaned and smeared with salt, turmeric powder and corn flour.
2.    Deep frying coated barramundi until crispy. Set aside.
3.    Sauté and mix ginger-garlic paste, chilli paste and multi-purpose paste until fragrant.
4.    Put other pastes and honey, mixing it well.
5.    Finally add garnishing ingredients (except lettuce) into the sauce.
6.    Pour the sauce over fish and ready to be served.
  
Siakap Masak Tiga Rasa

Bahan-bahan

1 ekor ikan siakap
Serbuk kunyit
Garam
Tepung jagung
Minyak masak

Bahan untuk sos

1 sudu besar pes pelbagai guna
3 sudu besar pes cili kisar
1 sudu teh sos plum
1 sudu teh sos masam manis
1 sudu teh madu
1 sudu besar sos lada hitam

Bahan hiasan

3 inci timun dipotong kiub
3 keping nenas dipotong kiub
1 bawang besar dipotong kiub
1 tomato dipotong kiub
2 inci lobak merah dipotong bulat
Daun salad
Capsicum dipotong kiub (warna merah, hijau dan kuning)
1 cili merah diracik
3 cili padi diracik

Langkah-langkah

1.    Ikan dibersihkan dan dilumur dengan garam, serbuk kunyit dan tepung jagung.
2.    Goreng tenggelam siakap sehingga garing.  Ketepikan.
3.    Tumiskan pes halia-bawang putih, pes cili kisar dan pes pelbagai guna sehingga naik bau.
4.    Masukkan pes-pes lain dan madu, digaul sebati.
5.    Setelah mendidih, masukkan bahan hiasan (kecuali daun salad) seketika kedalam sos.
6.    Curahkan sos ke atas ikan dan siap untuk dihidang.
